M starts with Cabernet Sauvignon vines planted to Cabernet Clone 4 on 110R rootstock, which produces structured fruit with ample tannins and acid to balance the concentrated dark fruit flavors. In order to perfect his process, Rob Mondavi, Jr. consulted with viticulturist Danny Schuster to help unlock the secrets of his family’s Animo Vineyard. Rob and Danny harness an organic natural approach to the vineyard that exemplifies the beautifully, unique attributes of this site.

The best wine to date that I have tasted under this label is the 2007 M by Michael Mondavi. With a production of 300 cases of 100% Cabernet Sauvignon, aged 20-22 months in French oak before bottling, it has the most opaque purple color of the group. The style seems like a Napa version of a Graves wine interwoven with one from St.Estephe. With plenty of distinct loamy soil, earth, and charcoal notes along with pure black currant and plum-like fruit, this wine is dense, full-bodied, still somewhat restrained, but displaying sweet, velvety tannins and impressive texture and length. This is a beauty that should be cellared for 3-4 years and drunk over the next 25-30. 94+ (RP)

The fruit’s rich flavors, ripe tannins and balanced acidity enabled Michael to craft M Cabernet Sauvignon with unmatched richness, elegance and harmony. After the grapes were gently hand-harvested and the individual clusters selected, they were de-stemmed and lightly crushed into small punch down tanks. After a five day cold soak period, the juice was fermented at 27-30°C. Extended post-fermentation maceration brings the total skin contact time to 28-32 days fully marrying the wine’s rich black fruit flavors and supple, sculpted tannins.
